Chicken and Nettles Soup

We were blessed with a beautiful sunny day in Rose Valley last Saturday for the Rose Valley Falls Herb Walk. In addtion to the falls, the butterflies, and all the other great plants and flowers we saw, the highlight for me was finding a large stand of Giant Stinging Nettles along Howard Creek at just the right stage for harvesting. I demonstrated how Juanita Centeno taught me to eat them raw. Then, after the walk had concluded, I returned to this spot and topped some of the plants for dinner.

Rondia made a super delicious, awesomely nutritious Chicken and Nettles Soup that night featuring an Open Nature chicken and organic celery and potatoes from Von’s, along with organic carrots, onions and garlic from Farmer & the Cook. She seasoned it with fresh herbs from our garden and other secret spices, of course. Mmm. mmm. mmm. mmm. mmm!
